Hi my name is Abby, and I am a starbucks addict. This slight problem of mine started five years ago when Dan and I lived in Columbus, Ohio and I worked at Starbucks during the mornings before my shift at a salon. Some may have thought I was crazy to of worked at 5 am, only to work until 9pm at night, but an addict will do anything for free latte’s! These brownies are something I came up with when I stumbled across a packet of Via Carmel Coffee in my cupboard. Coffee instantly enhances the flavor of chocolate and these brownies will wake you up with just the smell! Easy recipe, amazing results!
INGREDIENTS:
- 8 Tbsp butter
- 8 oz milk chocolate chips (nestle)
- 4 oz semi sweet chocolate chips (nestle)
- 2 large eggs
- 1 1/4 cup sugar
- 1/2 tsp salt
- 1 cup flour
- 1 package of via coffee, any flavor, I used carmel. If you do not have Via coffee at hand, use 3 Tbs of espresso powder.
DIRECTIONS:
Preheat oven to 350* F. Line a 11×7 dish with parchment paper and coat it with butter or a nonstick spray.
In a microwave safe bowl, put all the chocolate chips in and the butter cut into cubes. Place in your microwave for 30 seconds at a time until completely melted. It took 3x for me, make sure to stir well after each time, little bits will melt once stirred and you do not want to overheat the chocolate. Set aside.
In a seperate bowl, whisk together the eggs, sugar, salt and via coffee until combined. Mix in warm chocolate until incorporated. Add in the flour and stir until it is all combined, do not worry about small lumps.
Pour into a 11×7 dish, spread into an even layer. Bake for 35-40 minutes or until a toothpick comes out with few crumbs attached. Let the dish cool on a wire rack, at room temperature for approximately 2 hours.
Cut into desired size, and store in an air-tight container.

Personally I loved these. I miss drinking my coffee and I love brownies so I got two treats in one. Great job!!!! And it had the right amount of caramel flavor!!
