During the week we are laying low on bread and pasta. And if I’m being totally honest with you, it’s killing me. Heavy, stick to your rib dinners are my jam and what I usually look forward to after a long day chasing kiddos and snacking my way through the hours.
But on the weekends, WE SPLURGE.
And while these meatball sliders are hardly a hardcore splurge, they turned out so ridiculously delicious! Great if you have guests popping over – they are simple to make and the perfect finger food that will fill your up your belly!
When it comes to anything BUT baking, I hardly write a recipe down. It’s the old school, “little bit of this, little bit of that”. Thankfully, these sliders are totally fool proof. So let’s whip them up!
1lb ground turkey : plain bread crumbs : 1 egg : salt + pepper : garlic powder
Mix it all together in a bowl, start with 1/4 cup of breadcrumbs and add more if your meatballs are too wet.
In a baking dish, pour 1/2 a jar of marinara sauce on the bottom. Roll your meatballs, and place on top of the sauce.
Bake at 375* for 25-30 minutes.

Take one package of those amazing Hawaiian slider buns and slice the buns in half. Set them up in a baking dish, bottom side only. Place one meatball on top of each bun bottom, and sprinkle with mozzarella cheese. Smush the top half of the bun to close up the sammy.
I whipped up a little butter/cheese mixture to spread on top of the sliders to give them a little bit more oomph. It was worth the extra minute to whip it up –
1/2 stick melted butter : bit of parmesan cheese : shake of garlic powder + oregano.
Smear the butter bliss over the buns. Place them back into the oven for another 5-10 minutes until the cheese melts and the buns toast up a bit.
You see up there? Yeah, that is carb/meat/cheese heaven. What I live for.
