This whipped feta recipes goes wayyyyy back on my blog, I think even 2014? It is the holy-grail to my tomato crostini appetizer. That appetizer made me think, why stop there? Why not make it BIGGER, JUICIER, CREAMIER?! That’s when this Heirloom Tomato Sandwich was born…. just look at this beauty
The Heirloom Tomatoes at Heinen’s right now are so vibrant and plump, it is the perfect time to enjoy this sandwich before summertime tomatoes are gone.
What you will need….
- Heirloom Tomatoes
- Sourdough Bread (or any bread from Heinen’s Bakery you prefer)
- Whipped Feta (recipe below)
- Arugula
- Garlic Expressions Salad Dressing
Heirloom Tomatoes
Slice nice, 1/4 thick slices of tomato. Drizzle garlic expression salad dressing on each slice and let sit for a minute to soak in the delicious dressing.
Whipped Feta Cheese
- 4oz Heinen’s Cream Cheese, at room temperature
- 6oz Crumbled Feta Cheese
- 2 Tbsp Extra Virgin Olive Oil
- 1 Lemon, zest + juice
- 1/4 tsp Black Pepper
- 1/2 tsp Kosher Salt
- 1 tsp minced garlic clove
1. Add all of the ingredients listed above into a food processor, blend together for 3-4 minutes until the spread is light and fluffy. Store in an airtight container in the fridge until ready to use. This spread can be made up to 48 hours in advance.
Assembly
Toast Heinen’s Sourdough bread – Generously spread the whipped feta on the bottom slice of bread, add a thick slice of heirloom tomato on top of the whipped feta, place arugula on top of the tomato and then finish with spreading more whipped feta on the top sourdough slice, whipped feta spread side down, as the glue to keep this delicious sandwich together!
