What ever happened to my obsession with posting muffins? Back in the day, my blog was covered with these little bomb shells of delight. Like my whole wheat roasted strawberry muffins, coffee cake muffins, pumpkin muffins, blueberry oatmeal crunch muffins, just to name a few favorites!
Now let’s add these muffins to the list – chocolate chip zucchini muffins! I have heard so many people say they have an abundant supply of zucchini from their garden this summer, so here is a fantastic way to use them up.
Picky eaters? Picky husband? Picky breakfast guests? Look no further than to add these to your menu and you will be glad you did. Brody this morning said “Can I have more of those, Mom? I can because they’re nutritious right” Oh slay me you adorable boy, you can have 10 more.
These muffins are packed with flavor, from the zucchini to the chocolate chips, to the hint of nutmeg. I love being able to toss one at the boys in the morning before school and that this batch is big enough to last, well a few days in our house!
Let’s talk kitchen tools. BUY. A. GRATER. Why oh why did I convince myself for years that I did not need one?? Always cutting the tiniest of matchstick veggies by hand. Did it make me feel powerful? Like a woman from the pioneering days? No, I’m an idiot who wasted way to many days in the kitchen take the long road to deliciousness. I snagged my grater at Home Goods, for only $5.99 and it will forever be my best buddy in the kitchen. I plan on grating everything I can for the next few weeks to make up for lost time.
I love heating them up in the morning and spreading a bit o’ butter in the cracks. And those little flecks of green make me feel good about getting my veg on in the a.m.

This very recipe made 24 lovely muffins, that lasted barely two days in my house. We even gave a few to our new lovely neighbors to share the love. Because lord knows if there are carbs in my house they will be consumed and I will switch into sweatpants to convince myself I’m bloated from PMS and not the 4 muffins I consumed, just saying, make these!!
